Easy bruschetta: 3 version you'll fall in love with!

INGREDIENTS
15 slices of bread;
Olive oil;
2 garlic cloves, sliced in half;
Salt to taste.
Tomatoes and olives:
10 medium red cherry tomatoes, chopped;
10 olives, sliced;
Fresh basil, chopped;
Salt, pepper, olive oil to taste.
Ricotta and tomatoes:
250 g (1 cup) ricotta cheese;
5-7 medium yellow cherry tomatoes, chopped;
Fresh basil, chopped;
Salt, pepper, olive oil to taste.
Pizza:
120 ml (½ cup) tomato sauce;
120 g (1 cup) mozzarella, shredded;
A pinch of dry oregano.
METHOD
- Use a dry skillet to grill sliced bread on both sides. Rub each slice with garlic, drizzle with olive oil, and season lightly with a pinch of salt.
- For tomato and olives bruschettas: mix tomatoes, olives, and basil with some olive oil and salt. Place a heaping tablespoon of tomato salad on top of the bread slice.
- For ricotta and tomato bruschettas: spread ricotta on top of the toasted bread. Mix tomatoes with basil and some olive oil, and season with salt and pepper. Place a tablespoon of filling on top of the ricotta.
- For pizza bruschettas: spread tomato sauce on top of the bread slice and sprinkle mozzarella on top. Broil until cheese has melted and sprinkle some oregano on top.
